500g golden caster sugar
500ml double cream
3 tbsp liquid glucose
140g white chocolate, cut into chunks
Method of Making:
Line a 22cm square non-stick tin with baking parchment. Put the caster sugar, double cream & liquid glucose in a pan. Gradually heat together, stirring constantly, until the sugar melts & stops feeling grainy on the base of the pan. Turn up the heat & quick boil until a little amount of the mix dropped into a glass of icy water sets into a soft ball that you can pick up on a teaspoon. By that time the bubbles in the combination will look small & even.
Turn off the heat & keep stirring for five minutes or until the mix begins to thicken a small. Shake over in the white chocolate & swirl it through the mix once using a spatula or the grip of a wooden spoon. Pour into a tin & leave the fudge during the night to set, then turn out & cut into squares. Will keep for up to two months in an airtight container, do not store in the fridge or the fudge will go soft.
