One 1/2 cups all-purpose flour
One teaspoon baking soda
One teaspoon baking powder
1/2 teaspoon salt
three bananas, mashed
3/4 teaspoon ground cinnamon
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/3 cup oil of vegetable
1 1/2 spoon pure vanilla extract
For The Crumb Topping
Two tablespoons all-purpose flour
1/8 spoon ground cinnamon
1/3 cup packed brown sugar
One tablespoon butter
Method Of Making:
1) Preheat oven to 370 degrees F. Slowly grease twelve muffin cups, or line with muffin papers.
2) In a big bowl, mix 1 1/2 cups flour, baking soda, baking powder, salt & cinnamon. In one another big bowl, thrash together bananas, sugars, egg, oil & vanilla. Mix the banana mixture into the flour combination just until moistened and evenly scoop batter into ready muffin cups.
3) Make the Crumb Topping: In a little bowl, combine together brown sugar, flour & cinnamon. Cut in butter until consistently distributed & crumbly in texture. Sprinkle topping over muffins.
4) Bake in preheated oven for 15-20 minutes, or until a toothpick inserted into middle of a muffin comes out clean.
